Jerusalem Artichoke Fritters

So, our CSA started up this week – I am so happy about this!  We have six months of beautiful, local, organic produce ahead of us, and I can’t wait to see what the season will bring.

This week I was intrigued by the inclusion of jerusalem artichokes in our initial season share (I thought for sure we’d get radishes!). I didn’t want to eat them raw, nor did I want to roast them, so I searched the internet for something interesting and tasty-sounding. I found that in these jerusalem artichoke fritters, which I prepared Tuesday night.

I loved them! The combination of the jerusalem artichokes, carrots, and shallots is lovely, and the chive-lime sour cream is wonderful – this is some seriously good sauce. These fritters are easy to put together and take only about a half hour, start to finish, to make.

I was also happy to be able to use some of my Cayuga Organics cornmeal in them as well! Sprouted wheat flour worked perfectly in place of conventional white flour, so I was pleased by this adjustment.

Jerusalem Artichoke Fritters
Lightly adapted from the New York Times

While grating them, the jerusalem artichokes oxidize quickly, so don’t be alarmed by dark coloring that appears after grating.

1/2 pound jerusalem artichokes, scrubbed
1 carrot, peeled
3 shallots, thinly sliced
2 tablespoons yellow cornmeal
1/4 cup sprouted wheat flour
1/2 teaspoon salt
1/2 teaspoon baking powder
Fresh black pepper to taste
hot sauce to taste
2 eggs
3 tablespoons chopped chives
1/2 cup sour cream
1 tablespoon fresh lime juice
Oil for frying (coconut oil would be wonderful)

Heat oven to 250 degrees. Grate Jerusalem artichokes and carrot into a mixing bowl. Add shallots. Stir together cornmeal, flour, salt and baking powder, and stir in, mixing well. Season with pepper and hot sauce to taste. Add eggs, and mix thoroughly.

Combine chives, sour cream and lime juice, and set aside.

Pour oil into a large skillet, so that it just covers the bottom of the pan. Heat over medium-high heat until sizzling. Drop mixture in by tablespoons, flattening slightly. Fry until crisp and golden brown, turning once. Transfer to oven on a baking sheet lined with paper towel while frying more. Serve with sour cream mixture.

Yield: 4 servings.

Dos Toros – An Initial Review

Back in January, I got wind of a new taqueria in Manhattan, called Dos Toros.  The claim made was that they served good Mission-style burritos.  Having lived in NYC for almost five years (and on Long Island for four), I can tell you that I’ve heard many make this claim, but none have delivered.  And having lived in the Bay Area for 9 years, I think I’m a pretty good judge of what makes for a good Northern CA burrito.

Many of us Bay Area “expats” wish for a source for a proper burrito in NYC, and are constantly on the lookout for something that even comes close.  I’ve been disappointed time after time, but I had great hopes for Dos Toros.  I mean, the owners, Leo and Oliver Kremer, grew up in the Bay Area and ate lots and lots of burritos in SF, so that’s a great start.

I’m happy to say – I think I have found what I’m looking for.

As we were walking home from an awesome evening of beautiful music, we found ourselves on Fourth Ave, a little bit hungry.  All of the sudden I looked to my right and saw the bright orange Dos Toros sign, glowing in the dark.  My eyes and my stomach told me I had to check it out.

Now, since we encountered the establishment at about 10:30pm, I didn’t want to ingest an entire (or even half of a) burrito – I know better than to suck one of these down so close to bedtime (which was around midnight).  So, I chose a taco.  I ate a lot of tacos at Bay Area taquerias, and I know what I like.

This was an excellent decision, as the taco was just enough to satisfy me.  I chose a pollo asado taco, and my guy got a simple bean and rice taco, both served with guacamole, pico de gallo, and green sauce.  And both were absolutely delicious.

This taco is special.  The tortilla itself is made locally by Tortilleria Nixtamal in Corona/Queens, and it was fabulous – such wonderful texture and fresh taste; the chicken is raised without antibiotics or hormones; the rice is cooked with chicken broth, which makes it more nourishing than if it was cooked simply with water.  As for the rice and beans, the beans come from Cayuga Organics, the people that supply dry beans and grains for our CSA.  They grow the best beans I’ve ever eaten.  Plus they are local, just a little ways upstate.

Additionally, their utensils and paper products are biodegradable; they compost and recycle; they clean with non toxic, biodegradable products. And like a lot of places these days in NYC, they use reclaimed wood for their tables, chairs, and wall paneling materials (from a barn upstate), and reclaimed tin for the ceiling. To top it off, their energy comes from renewable energy sources. A+ in sustainability.

I plan to return to try one of the burritos, which will be the true test. I have high hopes – Dos Toros, I expect you’ll have the burritos I’m looking for!  I’ll take pictures next time, too.

Spinach by Yotam Ottolenghi

I first came across the name “Ottolenghi” on the 101 Cookbooks site, where Heidi featured a recipe from Ottolenghi: The Cookbook.  The recipe consists primarily of Bhutanese red rice and quinoa, along with aromatics, pistachios, dried apricots, and arugula.  I remember making and really enjoying this dish, especially entranced with the red rice, which was unusual to me but so delicious.  FYI, “Ottolenghi” is the last name of Yotam Ottolenghi, who with Sami Tamimi are behind Ottolenghi, a very popular food shop and catering company in London, UK.

Last month, I discovered another Ottolenghi recipe that looked fantastic.  It’s very simple – spinach, pine nuts, ricotta, and some aromatics and spices.  I was particularly intrigued by the use of sumac, which I’ve only come across in middle eastern restaurants here in town (most notably at Kabab Cafe).

Sumac spice, not to be confused with the more toxic sumac like poison ivy, is a dark red spice derived from a wild bush in the Mediterranean.  The spice has as tart, lemony flavor.  It’s really delicious, and since I have so much of it left over, I look forward to trying other dishes that require it.

So, this lovely spinach dish.  I thought it was very good, really tasty, and easy to make; and I’d make it again in an instant.  I loved the use of fresh, mild cheese alongside the tart sumac, plus the cheese and nuts boost the protein content. I was happy to be able to take advantage of buying fresh, locally made ricotta at my neighborhood salumeria.  This cheese is so fresh and clean tasting, it’s a joy to use.  This dish is also good the next day.

Zukay Probiotic Relish is Delicious

Since it’s Memorial Day, the unofficial start of summer, some of you are probably having BBQs today. When I am grilling, I really like to cook hot dogs – via my CSA, I have access to awesome dogs made with pastured meat, yum. And one of the things I like putting on my dogs is pickle relish.

For years, I just used conventional relish, but over a year ago I became aware of some pretty excellent relish made by a company called Zukay, thanks to Ann Marie over at cheeseslave.  In fact, she liked it so much, and felt it was such a good product, that she gave away an entire case of the stuff!  I was inspired, and definitely wanted to try it, so I picked up a jar of the garlic dill relish at Whole Foods one day.

So, how did I like it?  I loved it!  Still do.  I put it on hot dogs, but I bet it would be good in tuna or salmon salad, and chicken salad, too.

Now, what makes this stuff so special?  Why did I chuck my old relish for this? Well, it’s naturally fermented for one, which means probiotics, which means good for your digestion.  It’s raw, dairy-free and gluten-free, too, which could be really beneficial to those of you who have these intolerances.

Best of all, though, it’s delicious.

Perfect Crispy Bacon

I love bacon.  I really do.  However, over the years I haven’t had the best luck cooking it, even though it seems so simple in theory.  When cooking it on the stove top – the only way I’d been taught – I’d always get grease spatter on my hands (ouch) and the bacon would cook unevenly.  I kind of gave up on preparing bacon, to be honest.

However, I’d recently heard about cooking bacon in the oven, and since I wanted to make a cobb salad on Friday, I thought I’d give this technique a chance.  Well, I am a total convert now!  This method works beautifully and turns out amazing crispy bacon, with no grease spattered hands or burnt bacon.

I took my inspiration from a method described on about.com, which is as follows:

Line a baking sheet with foil. This will make cleanup easier later.
Arrange bacon slices on the foil and place the baking sheet on the center rack of a cold oven. Close oven door. Turn oven on to 400°F. Walk away.

Come back 17 to 20 minutes later. As soon as the bacon is golden brown, but not excessively crisp, it’s done. The exact time will depend on the thickness of the bacon slices, and also on how quickly your oven reaches the target temperature.

Remove the pan from the oven. Transfer the bacon to another sheet pan lined with paper towels to absorb the fat. You can pour the liquid fat into a heat-resistant container to save for other uses. I like to pour it through a strainer lined with cheesecloth to filter out any crunchy bits.

My observations:

  • The foil was a really good call.  I wouldn’t want to do it without foil because it really does make cleanup easy.
  • At about 15 minutes, I turned over the bacon slices, using tongs to grab them. I think that gave the bacon a chance to cook more evenly than just cooking it on one side.
  • One way to drain the bacon is to set the slices on a baking rack which sits over a paper towel.  That way, the bacon won’t be sitting in its own fat and will have a better chance to more thoroughly drain off the fat.

My household was really impressed by this bacon. It was perfectly crispy without being burned or overcooked. In fact, you could hold the bacon horizontally and there was no bending. It snapped off and almost melted in your mouth. It was perfect in our cobb salad (which was delicious), and for breakfast this weekend.

I will forever cook my bacon this way.

Radish, Orange, and Mint Salad

Usually, I am not a big fan of radishes – they are bitter-spicy and taste a little like dirt.  I’ve always wanted to enjoy them, mostly because my grandma loves them and I love my grandma; she will eat them raw, out of hand, like tiny apples.

So, I’m happy to say that I’ve found a way to enjoy these round red radishes – finally!

These radishes star in a salad I first tasted at an underground supper club called The Sunday Night Dinner, run by my friend Tamara.  The whole meal was fabulous, but this salad stuck out in my memory as spectacular.  It presented an amazing combination of flavors – earthy, sweet, bright, perfumed.  It was made with minimal ingredients: oranges, radishes, mint, and orange flower water.  The combination is simply amazing.  And addictive.  I had three servings that night.

As I was planning out my meals for the week, this salad came to mind, and I knew I had to make it.  I searched the internet for it and came across a recipe from Saveur that resulted in this same salad I loved from that original dinner.  The orange juice really ameliorates the spicy nature of the radishes without breaking their spirit, and the mint is another refreshing touch.  The orange flower water perfumes it all beautifully.

This will be the primary way I eat radishes from now on, I expect.

Radish, Orange, and Mint Salad
adapted from a recipe by Saveur

1 to 2 bunches red radishes, about 1/2 lb., washed and trimmed
1 1/2 tbsp. unrefined sugar – rapadura or sucanat work well
1 tsp. orange flower water
1 1/2 tbsp. fresh lemon juice
2 tbsp. fresh orange juice
salt
1 seedless orange
4 sprigs fresh mint, chopped

Shred radishes or slice thinly and julienne. Place in a small bowl and sprinkle with sugar. Stir and set aside to macerate for 15 minutes. Drain off excess liquid, if any. Cover and refrigerate, about 20 minutes, until well chilled.

Whisk together orange flower water, lemon juice, and orange juice in a small bowl, and season to taste with salt. Pour dressing over radishes and lightly toss.

Peel and section orange. Add to radishes.

Chop the mint and add it, mixing everything together.

Serves 2-4.

Omelet – a Quick and Delicious Dinner

I don’t remember how I came up with this dish, but it was probably inspired by having a bunch of leftovers combined with my love of eggs. Basically, “omelet”, as I call it, is vegetables and meat sauteed in a pan, topped with uncooked scrambled eggs and cheese, and steamed until the eggs are cooked through. It doesn’t sound exotic or fancy, and isn’t the prettiest thing around, but it is tasty, nourishing, and easy to prepare. It’s an excellent dish to cook when you have little time or are just plain tired and want something to eat fairly fast. It’s also a great canvas for improvisation.

I mentioned leftovers above – it’s a great dish for leftovers – greens work especially well, as do onions, potatoes, carrots, summer squash, and tomatoes. You can mix in some pesto with the eggs, add diced or ground meat, sausage, or cured meats. You can also make it very simple with just onions, potato, egg, and cheese. You can even add a sauce you like at the end. This dish is incredibly flexible, which is one of the things I like about it.

Last night, I used half a white onion, leftover garlic lemon greens, chopped cooked chicken, pesto ricotta, eggs, and grated Locatelli (a salty hard cheese). In this case, everything but the eggs and cheese were leftovers from last week. It was a very tasty combination.

So, what I did was:

  • Diced up the onions and sautéed them in olive oil (about 1 T) until they became translucent.
  • Added the chicken and cooked that a little bit.
  • Then came the greens, and I cooked everything together until it was heated through.
  • I also made sure that the pan was completely covered with this mixture, so that eggs would not leak through to the pan surface; it’s best if they sit atop the vegetables.
  • Scrambled the eggs and poured them on top (I used 5 eggs this time, which was perfect)
  • I then put small dollops of pesto ricotta across the top of the mixture, and sprinkled on the grated cheese.
  • I put a lid on it, turned the heat down to low and let it steam. I’d check on it from time to time to make sure the eggs were cooked through. It took about 10-15 minutes for the eggs to cook and the dish to come together.
  • I only salted the onions a little bit, as the leftovers had all be seasoned when I cooked them originally, so extra salt was not needed.

If I were skipping the pesto ricotta, I’d probably use a sharp cheddar in place of the Locatelli and eat it with hot sauce!

So, in general, the order of ingredients would go as follows:

  • aromatics (e.g. onion, garlic, bacon)
  • ground/chopped meat (if using)
  • hard veggies (e.g. carrots, potatoes)
  • soft veggies (e.g. greens, summer squash, tomatoes, sauce)
  • herbs
  • eggs (solo, or combined with sauce like pesto, tomato, or salsa)
  • cheese
  • The order of things can even be re-arranged if it works better for you.

Like I said, there is room for improvisation and the dish is extremely customizable.

It’s been a quick and delicious dinner staple in my household and has provided us with delicious and nutritious meals numerous times. I hope you find it a useful and enjoyable dish as well.
